Masala Macaroni Recipe

Ingredients
  

  • 2 cups elbow macaroni
  • 1 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 medium onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes, chopped
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt, to taste
  • ½ cup green peas
  • 1 small bell pepper, diced
  • ¼ cup grated cheese
  • Handful fresh coriander leaves, chopped

Method
 

  1. Boil salted water and cook the macaroni until al dente, about 8 minutes. Drain and set aside.
  2. Heat oil or ghee in a wide pan over medium heat. Add cumin seeds and let them crackle, then cook the onion for 5 to 6 minutes until golden.
  3. Stir in ginger-garlic paste, cook 1 minute. Add tomatoes, turmeric, chili powder, coriander powder, and salt. Cook for 5 minutes until thick and oil separates, then mix in garam masala.
  4. Add peas and bell pepper, cook 2 minutes. Toss in the cooked macaroni and stir for 2 to 3 minutes. Sprinkle cheese and fold until melted.
  5. Garnish with fresh coriander and serve hot.

Notes

If the dish sits for a few minutes, the pasta will soak up the masala. Reheat leftovers with a splash of water to bring back the glossy texture.
