- In a saucepan, combine water, ginger, cardamom, peppercorns, cinnamon stick, and cloves. Bring to a boil, then reduce heat and simmer for 5 to 7 minutes.
- Stir in the tea leaves and simmer for 3 minutes. Pour in the milk, return to a gentle simmer, and cook for 2 minutes more.
- Strain through a fine-mesh sieve into a mug. Stir in sugar while hot and serve immediately.
Notes
For a richer cup, stick with equal parts water and milk. Chai always tastes best fresh, but any extra can chill overnight and become iced chai the next day.
