Ingredients

  • 8 slices soft white bread
  • 2 medium potatoes, boiled and mashed
  • 1 tsp chaat masala
  • ½ tsp cumin powder
  • ¼ tsp red chili powder
  • ¼ tsp salt
  • 2 tbsp green chutney
  • 2 tbsp date-tamarind chutney (optional)
  • ½ small cucumber, thinly sliced
  • 1 small tomato, thinly sliced
  • ½ small red onion, thinly sliced
  • 4 slices processed cheese
  • Butter, softened

Method

  1. Mix mashed potatoes with chaat masala, cumin, chili powder, and salt until well combined.
  2. Butter one side of each bread slice. On the unbuttered side of four slices, spread green chutney and date chutney, then layer potato masala, cucumber, tomato, onion, and cheese. Close with the remaining bread, buttered side out.
  3. Toast sandwiches on a medium-hot tawa or pan for about 2 to 3 minutes per side, pressing gently, until golden and crisp. Use a panini press if preferred, 3 to 4 minutes total.
  4. Cut diagonally and serve immediately with extra chutney on the side.

Notes

Chaat masala is the backbone of the filling; if you cannot find it, the amchur and black salt swap in the FAQs is your best bet. Potato masala keeps, but assembled sandwiches should be toasted fresh for the crispest bread.
