Ingredients

  • 1 ½ lbs large shrimp, peeled and deveined
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 tbsp unsalted butter, divided
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup oil-packed sun-dried tomatoes, drained and thinly sliced
  • ½ cup low-sodium chicken broth
  • ¾ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Pinch red pepper flakes (optional)
  • Fresh basil leaves, for serving

Method

  1. Pat shrimp dry, season with salt and pepper. Heat 1 tbsp butter and oil in a skillet over medium-high heat. Sear shrimp in a single layer, 2 minutes per side, then transfer to a plate.
  2. Melt remaining butter, add garlic and sun-dried tomatoes, and cook 1 minute.
  3. Pour in broth, scrape up browned bits, then stir in cream, parmesan, and red pepper flakes. Simmer 3 to 4 minutes until slightly thickened.
  4. Return shrimp and juices to the sauce, warm through 1 minute, then plate and top with basil.

Notes

If the sauce over-thickens, stir in a tablespoon of warm broth or pasta water to loosen it. This dish is meant to be saucy, so don’t reduce it too much.
