- Heat the olive oil in a large skillet over medium heat. Add the onion with a pinch of salt and cook until soft, about 5 minutes. Stir in the garlic and cook 30 seconds more.
- Add the sun-dried tomatoes, tomato paste, and red pepper flakes. Cook, stirring, for 1 to 2 minutes until the paste darkens.
- Pour in the heavy cream and vegetable broth, then add the chickpeas. Season with salt and pepper. Bring to a gentle simmer and cook, uncovered, for 10 to 12 minutes, stirring occasionally.
- Remove from the heat. Add the spinach (if using) and let it wilt for a minute, then stir in the Parmesan until melted and smooth.
- Spoon into bowls, top with extra Parmesan and black pepper, and serve hot.
Notes
The spinach is optional but adds a nice pop of green. The sauce thickens as it sits, so when reheating, add a splash of broth or water to bring it back to a silky consistency.
