Marry Me Chickpeas Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
  • 2 tbsp tomato paste
  • 1/2 tsp red pepper flakes
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper
  • 2 cups packed fresh baby spinach (optional)

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the onion with a pinch of salt and cook until soft, about 5 minutes. Stir in the garlic and cook 30 seconds more.
  2. Add the sun-dried tomatoes, tomato paste, and red pepper flakes. Cook, stirring, for 1 to 2 minutes until the paste darkens.
  3. Pour in the heavy cream and vegetable broth, then add the chickpeas. Season with salt and pepper. Bring to a gentle simmer and cook, uncovered, for 10 to 12 minutes, stirring occasionally.
  4. Remove from the heat. Add the spinach (if using) and let it wilt for a minute, then stir in the Parmesan until melted and smooth.
  5. Spoon into bowls, top with extra Parmesan and black pepper, and serve hot.

Notes

The spinach is optional but adds a nice pop of green. The sauce thickens as it sits, so when reheating, add a splash of broth or water to bring it back to a silky consistency.
