- Preheat oven to 375°F (190°C). Season chicken with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high. Sear chicken until golden, about 4 minutes per side, then transfer to a plate.
- Reduce heat to medium. Melt butter in the pan, add garlic and sun-dried tomatoes, and stir 1 minute. Pour in broth, scrape up browned bits, and simmer 2 minutes. Stir in cream, parmesan, Italian seasoning, and red pepper flakes until smooth.
- Remove from heat. Stir in spinach until wilted, then add dry pasta, chicken, and any juices. Toss until everything is evenly combined.
- Level the mixture and top with mozzarella. Bake for 20 to 25 minutes, until cheese is melted and edges are bubbly.
- Let the casserole rest for 5 minutes, then scoop and serve warm.
Notes
If your skillet is not oven-safe, after tossing the casserole together, transfer it to a greased 9x13-inch baking dish before topping with cheese and baking. The pasta cooks right in the sauce, so there is no need to boil it separately.
