Ingredients
  

  • 1 ½ lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ cup oil-packed sun-dried tomatoes, drained and roughly chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • 3 cups fresh spinach, roughly chopped
  • 8 oz short pasta (penne, rigatoni, or rotini)
  • 1 ½ cups shredded mozzarella cheese

Method
 

  1. Preheat oven to 375°F (190°C). Season chicken with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high. Sear chicken until golden, about 4 minutes per side, then transfer to a plate.
  2. Reduce heat to medium. Melt butter in the pan, add garlic and sun-dried tomatoes, and stir 1 minute. Pour in broth, scrape up browned bits, and simmer 2 minutes. Stir in cream, parmesan, Italian seasoning, and red pepper flakes until smooth.
  3. Remove from heat. Stir in spinach until wilted, then add dry pasta, chicken, and any juices. Toss until everything is evenly combined.
  4. Level the mixture and top with mozzarella. Bake for 20 to 25 minutes, until cheese is melted and edges are bubbly.
  5. Let the casserole rest for 5 minutes, then scoop and serve warm.

Notes

If your skillet is not oven-safe, after tossing the casserole together, transfer it to a greased 9x13-inch baking dish before topping with cheese and baking. The pasta cooks right in the sauce, so there is no need to boil it separately.
