Ingredients

  • 1 unbaked 9-inch pie crust, store-bought or homemade
  • 2 cups pecan halves
  • ¾ cup pure maple syrup
  • ½ cup packed light brown sugar
  • ¼ cup unsalted butter, melted
  • 3 large eggs
  • 2 tsp vanilla extract
  • ½ tsp fine sea salt

Method

  1. Blind-bake the crust at 450°F (230°C) with weights for 12 minutes, then remove weights and bake 5 more minutes until dry.
  2. Reduce oven to 350°F (175°C) and toast pecans on a baking sheet for 5 to 7 minutes until fragrant.
  3. Whisk together melted butter, maple syrup, brown sugar, eggs, vanilla, and salt until smooth, then stir in toasted pecans.
  4. Pour filling into warm crust and bake at 350°F for 45 to 50 minutes, until edges are set and center wobbles gently.
  5. Cool completely on a wire rack, at least 2 hours, before slicing and serving.

Notes

The pie needs that full 2-hour cooling time to slice cleanly, so plan accordingly. If the center still feels too loose after cooling, you can chill the pie in the fridge for an hour to firm it up.
