Maple Pecan Granola Recipe

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup raw pecan halves, roughly chopped
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil (or vegetable oil)
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment. In a large bowl, mix the oats, pecans, salt, and cinnamon.
  2. In a small bowl, whisk the maple syrup, melted coconut oil, and vanilla until smooth.
  3. Pour the wet mixture over the oat mixture and toss with a spatula until everything is evenly coated. Spread onto the prepared sheet in an even layer.
  4. Bake for 20 minutes, then stir gently and spread flat again. Bake an additional 5 to 10 minutes until deep golden and fragrant.
  5. Let the granola cool completely on the sheet for at least 30 minutes, then break into chunky clusters. Serve or store.

Notes

For the crunchiest clusters, press the granola down firmly with a spatula before baking and avoid stirring at all during baking (just rotate the pan). Cooling time is critical, don’t rush it.
