- Heat oven to 375°F (190°C). Rub turkey with olive oil and season all over with salt, pepper, and garlic powder.
- Whisk mustard, maple syrup, and vinegar until smooth. Reserve 2 tbsp of the glaze.
- Coat turkey with the larger portion of glaze, place in a pan, and roast 30 minutes. Baste with pan juices and reserved glaze, then roast another 15 to 30 minutes until 165°F (74°C).
- Rest 10 minutes, slice across the grain, and spoon pan juices over the slices.
Notes
Cook time varies by breast thickness; always go by internal temperature. Letting the turkey rest a full 10 minutes is what keeps the slices juicy. The glaze will cause some dark caramelized bits in the pan, and those are perfect for spooning over the meat.
