Method
- Preheat oven to 350°F (180°C). Grease an 8-inch square baking dish. Whisk flour, sugar, and baking soda.
- In another bowl, whisk egg, apricot jam, vinegar, milk, and melted butter until smooth.
- Fold wet ingredients into dry until just combined. Pour batter into the dish.
- Bake for 30–35 minutes until golden and a skewer inserted comes out clean.
- While the pudding bakes, gently simmer heavy cream, butter, sugar, salt, and vanilla for 3–4 minutes until slightly thickened.
- Poke holes in the hot pudding, slowly pour the sauce over, and let soak for 10 minutes. Serve warm.
Notes
Allow the pudding to soak for at least 10 minutes before serving. For the best texture, let it rest a little longer so the sauce can fully absorb. Leftovers taste even more sticky and soft the next day.
