Make-Ahead Southern Pickled Shrimp Recipe

Ingredients
  

  • 2 lbs large raw shrimp, peeled and deveined
  • 1 cup thinly sliced red onion
  • 1 lemon, thinly sliced and seeds removed
  • 4 garlic cloves, smashed
  • 1 1/2 cups distilled white vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 1/2 tsp kosher salt
  • 1 tbsp pickling spice blend
  • Optional: a small dried chile pepper or a pinch of red pepper flakes

Method
 

  1. Bring a large pot of generously salted water to a boil. Add the shrimp and cook for 2 minutes, until just pink. Drain and immediately plunge into an ice bath. Drain well and pat dry.
  2. In a small saucepan, combine the vinegar, water, sugar, salt, and pickling spice. Bring to a simmer, stirring until the sugar and salt dissolve. Remove from heat and let cool slightly.
  3. In a large glass jar or deep bowl, layer the shrimp, red onion, lemon slices, and garlic cloves.
  4. Pour the warm brine over the shrimp mixture to cover completely. Let cool to room temperature, then cover and refrigerate for at least 2 hours, preferably overnight.
  5. Use a slotted spoon to transfer the shrimp, onion, and lemon to a serving bowl. Drizzle with a little brine and serve cold.

Notes

Chill the shrimp for at least 2 hours before serving; the flavor improves a lot with an overnight soak. Stir them once or twice while they sit to help everything mingle evenly.
