Ingredients
  

  • 4 large eggs, separated
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (113 g) unsalted butter, melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 3/4 cup (95 g) all-purpose flour
  • 2 cups (480 ml) whole milk, lukewarm
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon cream of tartar

Method
 

  1. Beat the egg whites and cream of tartar to stiff, glossy peaks. Set aside.
  2. In another bowl, beat the egg yolks and sugar until thick and pale. Mix in the melted butter and vanilla.
  3. Add the flour in two additions, alternating with the milk, mixing just until combined. The batter will be thin and slightly lumpy.
  4. Gently fold the egg whites into the batter in three additions until only a few white streaks remain; the mixture will look curdled.
  5. Pour into an 8-inch square pan lined with parchment. Bake at 325°F (160°C) for 50 to 60 minutes, until the top is golden and the center wobbles like set custard.
  6. Cool completely in the pan on a rack, then refrigerate at least 2 hours until firm. Lift out, slice, and serve.

Notes

The cake needs that chill time for the custard to set; don’t skip it. If any liquid separates from the batter before baking, give it a gentle stir, but don’t worry, the layers still form in the oven.
