- Preheat oven to 350°F and line a baking sheet with parchment. Mash banana, then whisk in maple syrup, oil, egg, and vanilla.
- Stir together flour, baking soda, cinnamon, and salt in a separate bowl.
- Fold dry ingredients into wet, then gently fold in oats and raisins or chocolate chips until combined.
- Drop 15 tablespoon-sized mounds of dough onto the sheet, bake 10-12 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a rack.
Notes
The cookies firm up as they cool, so don't leave them on the baking sheet much longer than 5 minutes or they'll keep cooking from residual heat. If the dough feels too sticky to scoop, chill it for 15 minutes.
