Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup raw pecans, roughly chopped
  • ½ cup shelled pumpkin seeds
  • ½ cup unsweetened coconut flakes
  • ½ tsp fine sea salt
  • 3 tbsp pure maple syrup
  • 2 tbsp melted coconut oil
  • 1 large egg white
  • 1 tsp vanilla extract

Method
 

  1. Heat oven to 300°F (150°C) and line a rimmed baking sheet with parchment. Toss oats, pecans, pumpkin seeds, coconut flakes, and salt in a large bowl.
  2. In a small bowl, whisk maple syrup, melted coconut oil, egg white, and vanilla until frothy.
  3. Pour the wet mixture over the dry, fold to coat, then press firmly into an even ½-inch layer on the prepared sheet.
  4. Bake 35 to 40 minutes, rotating the pan once, until edges are deep golden. Do not stir.
  5. Cool completely on the pan (about 30 minutes), then snap into clusters. Serve or store.

Notes

The cooling time is not included in the prep or cook times. Let the granola sit on the baking sheet until it’s fully room temperature; it firms up as it cools.
