Ingredients
  

  • 1 medium head cauliflower, riced (about 4 cups)
  • 2 tbsp unseasoned rice vinegar
  • 1 tsp granular erythritol or 2 drops liquid stevia
  • Pinch of salt
  • 3 tbsp soy sauce or tamari
  • 1 tbsp toasted sesame oil
  • 1 tbsp unseasoned rice vinegar
  • 1 tsp grated fresh ginger
  • 8 oz smoked salmon, sliced
  • 1 ripe avocado, sliced
  • 1 small cucumber, thinly sliced (about ½ cup)
  • 1 sheet nori, cut into thin strips
  • 2 tsp sesame seeds

Method
 

  1. Pulse the cauliflower florets in a food processor until rice-sized, then toss with 2 tbsp rice vinegar, sweetener, and salt; let it sit for 5 minutes.
  2. Whisk together the soy sauce, sesame oil, 1 tbsp rice vinegar, and grated ginger for the dressing.
  3. Divide the cauliflower rice between 2 bowls, then top with the smoked salmon, avocado, cucumber, nori strips, and sesame seeds.
  4. Drizzle the dressing over the bowls and serve immediately.

Notes

This bowl is best eaten fresh. If you’re meal prepping, keep all components separate and assemble just before serving.
