Method
- Cook the ground beef and diced onion in a large skillet over medium-high heat, breaking up the meat, until browned and the onion is soft, 5 to 7 minutes. Drain excess grease.
- Add the minced garlic, tomato paste, smoked paprika, salt, and pepper. Stir and cook for 1 to 2 minutes until the paste darkens slightly and the garlic is fragrant.
- Stir in the ketchup, Worcestershire sauce, mustard, vinegar, liquid smoke, and water. Reduce heat to low and simmer for 5 to 6 minutes, stirring occasionally, until the sauce thickens and coats the meat.
- Spoon the filling into butter lettuce leaves, top with cheese or pickles if using, and serve right away.
Notes
If the sauce thickens too much while sitting off the heat, stir in a tablespoon of warm water before spooning into the lettuce cups. This filling also makes great leftovers for lunch the next day.
