Ingredients
  

  • 1 (14 to 15 oz) can salmon, drained well
  • 1 large egg, lightly beaten
  • ¼ cup super-fine almond flour
  • 2 tbsp finely chopped green onion (green parts only)
  • 1 tsp Dijon mustard
  • ¼ tsp garlic powder
  • ¼ tsp fine sea salt
  • ¼ tsp black pepper
  • 2 tbsp neutral oil, for pan-frying

Method
 

  1. Drain the salmon, press out excess moisture, and flake it into a bowl. Mix in the egg, almond flour, green onion, Dijon, garlic powder, salt, and pepper just until combined.
  2. Divide into 4 mounds and shape into patties about 3 inches across and ½ inch thick.
  3. Heat the oil in a nonstick skillet over medium heat until shimmering. Cook the patties for 3 to 4 minutes per side until deeply golden and firm.
  4. Serve the patties hot with a big squeeze of fresh lemon and a sprinkle of salt if you like.

Notes

If the mixture feels wet after mixing, stir in 1 extra teaspoon of almond flour and let it sit for 5 minutes before shaping. The patties are most crisp right out of the pan, so plan to plate and eat right away.
