Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. In a large bowl, gently combine the ground beef, almond flour, Parmesan, egg, garlic, oregano, salt, and pepper until just mixed.
- Roll the mixture into 1.5-inch meatballs (about 20) and place them on the prepared baking sheet with a little space between each.
- Bake for 18 to 20 minutes, until an instant-read thermometer inserted into the center reads 165°F and the edges are lightly browned.
- Transfer to a platter, top with parsley if using, and serve with marinara or your favorite low-carb sauce.
Notes
If you are not serving them with sauce right away, keep the meatballs warm in a 200°F oven. They don’t need to rest before serving. After baking, you can simmer them directly in tomato sauce for extra flavor.
