- Brown the ground beef in a large pot over medium-high heat until deeply colored, about 8 minutes.
- Cook the onion and bell pepper in the same pot for 5 minutes, then stir in the garlic and tomato paste for 1 minute.
- Add the diced tomatoes, green chilies, all spices, broth, and salt. Bring to a simmer.
- Reduce the heat, partially cover, and simmer for 20 to 25 minutes until thickened. Serve with your favorite toppings.
Notes
Chili thickens as it sits. If you prefer a looser chili, stir in a little more broth when reheating. The spice level builds over time, so if making ahead, keep it mild and add heat when you reheat.
