- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Toss chicken with chili powder, cumin, garlic powder, and salt, then sear 5 minutes per side until golden and 165°F. Set aside to rest.
- Add remaining 1 tbsp olive oil to the same skillet, stir in cauliflower rice, and sauté 3 to 4 minutes until bright white and tender-crisp. Remove from heat and stir in lime juice and cilantro.
- Rest chicken 5 minutes, then slice against the grain into thin strips.
- Divide cauliflower rice among four bowls, top with sliced chicken, and add avocado, cheddar, sour cream, and salsa. Garnish with extra cilantro and a lime wedge, and serve right away.
Notes
The 5-minute rest for the chicken is already factored into the total time. If your cauliflower rice seems wet in the pan, let it cook an extra minute to drive off the steam before adding the lime.
