Ingredients
  

  • 1 lb ground beef (80/20)
  • ½ tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • 4 cups shredded iceberg or romaine lettuce
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup diced dill pickles
  • ¼ cup diced tomato
  • 2 tbsp finely chopped white onion
  • ¼ cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp dill pickle relish
  • ¼ tsp smoked paprika

Method
 

  1. Heat a large skillet over medium-high heat. Add the ground beef, salt, garlic powder, onion powder, and black pepper. Let it sit for 30 seconds, then break into crumbles and cook for 5-7 minutes until browned and no longer pink.
  2. While the beef cooks, stir together the mayonnaise, ketchup, mustard, pickle relish, and smoked paprika in a small bowl. Thin with a splash of pickle juice if needed.
  3. Divide the shredded lettuce between two bowls. Top with the hot beef, tomato, onion, pickles, and shredded cheese.
  4. Drizzle the special sauce generously over each bowl and serve immediately.

Notes

If you’re meal prepping, pack the beef, sauce, lettuce, and other toppings in separate containers and assemble right before eating. Reheat the beef in a skillet over medium heat for the best texture. Allowing the cooked beef to cool completely before refrigerating prevents soggy leftovers.
