Method
- Melt the butter in a large pot over medium heat. Add the onion and cook until softened, about 4 minutes, then stir in the garlic for 30 seconds.
- Add the broccoli and broth. Bring to a boil, then reduce the heat and simmer until the broccoli is fork-tender, about 10 minutes.
- Remove from heat. Use an immersion blender to partially blend the soup, leaving some broccoli chunks intact.
- Return the pot to low heat. Stir in the cream, then add the cheese a handful at a time, stirring until fully melted. Season with salt, pepper, and nutmeg.
- Ladle into bowls and serve hot, with extra black pepper on top if you like.
Notes
Shred the cheese yourself from a block. Pre-shredded cheese contains anti-caking agents that can make the soup grainy. If your soup ends up a little thick after sitting, thin it with a splash of warm broth when you reheat it.
