Ingredients

  • 1 lb ground beef (80/20)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp mayonnaise
  • 1 tbsp no-sugar ketchup
  • 1 tsp yellow mustard
  • 1 tbsp dill pickle relish
  • 1/2 tsp smoked paprika
  • 1/4 tsp onion powder
  • 1/2 cup shredded cheddar cheese
  • 2 cups shredded iceberg lettuce
  • 16 dill pickle chips

Method

  1. Brown the beef in a skillet over medium-high heat with garlic powder, salt, and pepper for 5 to 7 minutes. Drain excess fat if needed.
  2. In a small bowl, stir together mayonnaise, no-sugar ketchup, mustard, relish, paprika, and onion powder until smooth.
  3. Divide the hot beef between two bowls. Top each with cheddar, lettuce, pickle chips, and a drizzle of the sauce. Serve immediately.

Notes

If the beef is leaner than 80/20, add a teaspoon of oil to the skillet to prevent sticking. Meal preppers can make the sauce up to a week ahead and cook the beef a day or two in advance.
