Ingredients

  • 1 lb lean ground beef (90/10 or 93/7)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder, plus ⅛ tsp for the sauce
  • 3 tbsp light mayonnaise
  • 2 tbsp plain nonfat Greek yogurt
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tbsp sweet pickle relish
  • 1 tsp pickle juice (optional)
  • 4 cups chopped romaine lettuce
  • 1 large tomato, diced
  • ½ small red onion, thinly sliced
  • ¼ cup dill pickle chips
  • 4 tbsp shredded light cheddar cheese (optional)

Method

  1. Brown the lean ground beef with salt, pepper, garlic powder, and onion powder in a skillet over medium-high heat for 6 to 8 minutes. Drain any excess fat.
  2. Whisk together the light mayo, Greek yogurt, ketchup, mustard, pickle relish, pickle juice, and ⅛ tsp onion powder until smooth.
  3. Chop the lettuce, dice the tomato, slice the onion, and prep the pickles.
  4. Divide lettuce among bowls, top with beef, veggies, sauce, and cheese. Serve immediately.

Notes

The burger sauce benefits from a 10-minute rest in the fridge to let the flavors meld, but you can use it right away. For a lower-carb option, swap the ketchup for sugar-free ketchup and the sweet relish for dill relish.
