Ingredients

  • 1 ½ lbs Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ cup balsamic vinegar
  • 1 tbsp honey
  • ⅓ cup crispy fried onions
  • 2 slices cooked bacon, crumbled (optional)

Method

  1. Preheat oven to 425°F (220°C). Toss sprouts with olive oil, salt, pepper, and garlic powder on a baking sheet. Spread cut-side down and roast 20 to 25 minutes until deeply browned and crispy, shaking once halfway.
  2. Meanwhile, simmer balsamic vinegar and honey in a small saucepan over medium-low heat for 5 to 7 minutes until reduced by half and syrupy.
  3. Transfer roasted sprouts to a bowl, pour the glaze over them, and toss to coat. Return to the sheet and roast another 3 to 5 minutes until sticky.
  4. Remove from oven, immediately scatter with fried onions and bacon, give a gentle toss, and serve hot.

Notes

For even more caramelization, roast on the lowest rack. If you don’t have a saucepan handy, microwave the vinegar and honey in 30-second bursts, stirring between each, until it thickens into a glaze.
