Method
- Cook the pasta in salted boiling water until al dente, about 8 to 9 minutes. Drain and set aside.
- Melt 2 tbsp butter in a large saucepan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Pour in the evaporated milk and reduce heat to medium-low. Whisk in the cream cheese until smooth. Remove from heat and stir in the cheddar, Gruyère, Parmesan, Dijon, paprika, salt, and pepper until melted.
- Fold in the cooked pasta and chopped lobster. Adjust seasoning.
- Preheat oven to 375°F (190°C). Transfer mixture to a greased baking dish. Toss panko with remaining 2 tbsp melted butter and sprinkle evenly on top. Bake 20 to 25 minutes until bubbly and lightly golden.
- Broil 2 to 3 minutes until deep golden and crispy. Let rest 5 minutes, garnish with herbs, and serve.
Notes
If using raw lobster, steam or sauté tails for about 4 to 5 minutes until just opaque, then chop. The sauce will seem loose before baking, but it thickens in the oven and turns perfectly creamy.
