Lobster Mac and Cheese Recipe

Ingredients
  

  • 1 lb cavatappi or elbow macaroni
  • 4 tbsp unsalted butter, divided
  • 2 garlic cloves, minced
  • 1 can (12 oz) evaporated milk
  • 4 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 8 oz cooked lobster meat, chopped
  • 1 cup panko breadcrumbs
  • 2 tbsp melted butter
  • Fresh chives or parsley, for garnish

Method
 

  1. Cook the pasta in salted boiling water until al dente, about 8 to 9 minutes. Drain and set aside.
  2. Melt 2 tbsp butter in a large saucepan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  3. Pour in the evaporated milk and reduce heat to medium-low. Whisk in the cream cheese until smooth. Remove from heat and stir in the cheddar, Gruyère, Parmesan, Dijon, paprika, salt, and pepper until melted.
  4. Fold in the cooked pasta and chopped lobster. Adjust seasoning.
  5. Preheat oven to 375°F (190°C). Transfer mixture to a greased baking dish. Toss panko with remaining 2 tbsp melted butter and sprinkle evenly on top. Bake 20 to 25 minutes until bubbly and lightly golden.
  6. Broil 2 to 3 minutes until deep golden and crispy. Let rest 5 minutes, garnish with herbs, and serve.

Notes

If using raw lobster, steam or sauté tails for about 4 to 5 minutes until just opaque, then chop. The sauce will seem loose before baking, but it thickens in the oven and turns perfectly creamy.
