Loaded Sweet Potatoes with Black Beans and Avocado Recipe

Ingredients
  

  • 4 medium sweet potatoes (about 10 oz each)
  • 2 tbsp olive oil, divided
  • 1/2 tsp salt, plus more for potatoes
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 (15 oz) can black beans, drained and rinsed
  • 1/4 cup water
  • 1/2 cup shredded cheddar or jack cheese
  • 1 ripe avocado, diced
  • 1/4 cup sour cream
  • Fresh cilantro leaves, for serving

Method
 

  1. Heat oven to 400°F. Scrub sweet potatoes, prick with a fork, rub with 1 tbsp oil and salt. Bake directly on oven rack with foil below until tender, 45-50 minutes.
  2. In a skillet over medium heat, heat remaining 1 tbsp oil. Sauté onion 5 minutes, then add garlic, cumin, chili powder, and 1/2 tsp salt; cook 30 seconds. Stir in beans and water, simmer 5 minutes, and mash slightly.
  3. Slice potatoes open lengthwise, fluff the flesh with a fork, and season with a pinch of salt.
  4. Spoon bean mixture onto potatoes, top with cheese, avocado, sour cream, and cilantro. Serve immediately.

Notes

Let the potatoes cool just enough to handle before slicing them open, the steam will be hot. The bake time depends heavily on potato size, so check with a knife at the earliest suggested time. If you want to save time, microwave the potatoes as noted in the FAQ.
