Loaded Slow Cooker Potato Soup Recipe

Ingredients
  

  • 2 lbs russet potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 4 cups unsalted chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 1 cup whole milk
  • 1/4 cup sour cream
  • Toppings: cooked crumbled bacon, shredded cheddar, chopped chives

Method
 

  1. Add potatoes, onion, celery, garlic, broth, salt, pepper, thyme, and bay leaf to the slow cooker. Stir, cover, and cook on low for 6 hours until potatoes are fork-tender.
  2. Remove bay leaf. Transfer 2 cups of soup (mostly potatoes with some broth) to a blender and puree until smooth. Stir the puree back into the pot.
  3. Pour in milk and sour cream, stir, and continue cooking on low for 10 minutes until heated through.
  4. Ladle into bowls and top with cheddar, bacon, chives, and extra sour cream. Serve hot.

Notes

Let the soup sit for 10 minutes off heat before serving if you want a thicker consistency. It tightens up as it cools, so don’t add more liquid before tasting.
