- Add potatoes, onion, celery, garlic, broth, salt, pepper, thyme, and bay leaf to the slow cooker. Stir, cover, and cook on low for 6 hours until potatoes are fork-tender.
- Remove bay leaf. Transfer 2 cups of soup (mostly potatoes with some broth) to a blender and puree until smooth. Stir the puree back into the pot.
- Pour in milk and sour cream, stir, and continue cooking on low for 10 minutes until heated through.
- Ladle into bowls and top with cheddar, bacon, chives, and extra sour cream. Serve hot.
Notes
Let the soup sit for 10 minutes off heat before serving if you want a thicker consistency. It tightens up as it cools, so don’t add more liquid before tasting.
