Loaded Shrimp Nachos Recipe

Ingredients
  

  • 8 cups thick tortilla chips
  • 1 lb large raw shrimp, peeled and deveined
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 tbsp neutral oil
  • 2 cups shredded Monterey Jack and sharp cheddar cheese
  • 1 cup cooked black beans, rinsed if canned
  • 1 cup corn kernels
  • ½ small red onion, thinly sliced
  • 1 jalapeño, sliced
  • ½ cup sour cream
  • ¼ cup fresh cilantro leaves, roughly chopped
  • 1 lime, cut into wedges

Method
 

  1. Toss the shrimp with chili powder, cumin, garlic powder, and salt; slice the red onion and jalapeño, and prep the beans, corn, and cilantro.
  2. Sear the shrimp in hot oil over medium-high for about 2 minutes per side until pink and curled, then set aside.
  3. Preheat oven to 400°F (200°C). Layer half the chips on a sheet pan with half the cheese, beans, corn, and the shrimp. Top with remaining chips, cheese, and some jalapeño. Bake 8 to 10 minutes until bubbly and golden at the edges.
  4. Remove from oven and top with cilantro, remaining jalapeño, dollops of sour cream, and lime wedges. Serve immediately.

Notes

If your chips are on the thinner side, keep a closer eye during the last few minutes of baking and pull them as soon as the cheese melts. You can prep the shrimp seasoning and chop the veggies a few hours ahead; just keep the shrimp in the fridge until you are ready to sear.
