- Toss the shrimp with chili powder, cumin, garlic powder, and salt; slice the red onion and jalapeño, and prep the beans, corn, and cilantro.
- Sear the shrimp in hot oil over medium-high for about 2 minutes per side until pink and curled, then set aside.
- Preheat oven to 400°F (200°C). Layer half the chips on a sheet pan with half the cheese, beans, corn, and the shrimp. Top with remaining chips, cheese, and some jalapeño. Bake 8 to 10 minutes until bubbly and golden at the edges.
- Remove from oven and top with cilantro, remaining jalapeño, dollops of sour cream, and lime wedges. Serve immediately.
Notes
If your chips are on the thinner side, keep a closer eye during the last few minutes of baking and pull them as soon as the cheese melts. You can prep the shrimp seasoning and chop the veggies a few hours ahead; just keep the shrimp in the fridge until you are ready to sear.
