Ingredients
  

  • 1 lb ground beef
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ cup water
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) bag sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 small jalapeño, thinly sliced
  • ½ cup sour cream
  • ½ cup fresh pico de gallo or chunky salsa
  • ¼ cup chopped fresh cilantro

Method
 

  1. Cook the ground beef in a skillet over medium-high heat until no longer pink, about 7 minutes, then drain off most of the fat. Stir in the chili powder, cumin, garlic powder, and salt. Add the water and simmer for 2 minutes until reduced and glossy.
  2. On a parchment-lined rimmed baking sheet, layer half the chips, half the beef, half the beans, and half the cheese. Repeat with the remaining chips, beef, beans, and cheese, then scatter the jalapeño slices on top.
  3. Bake at 400°F (200°C) for 10 to 12 minutes, until the cheese melts and the chips edges turn golden.
  4. Pull the pan from the oven and top with dollops of sour cream, the pico de gallo, and the cilantro. Serve immediately.

Notes

Chips vary in thickness, so check the nachos at the 10-minute mark to avoid over-browning. If you like extra-crisp edges, run the pan under the broiler for the last minute, watching it closely.
