Loaded Mashed Potato Casserole Recipe

Ingredients
  

  • 3 lbs russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter, melted
  • 1 cup sour cream
  • 1/2 cup whole milk
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 6 slices bacon, cooked and crumbled
  • 3 green onions, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp salt, plus more for water
  • 1/2 tsp black pepper

Method
 

  1. Boil the cubed potatoes in salted water until fork-tender, 15 to 20 minutes. Drain well.
  2. Return potatoes to the pot and mash with melted butter, sour cream, milk, garlic powder, salt, and pepper. Fold in half the cheddar, half the bacon, and most of the green onions.
  3. Transfer to a greased 9×13 dish, spread evenly, and top with remaining cheddar and bacon.
  4. Bake at 350°F for 25 to 30 minutes until bubbly, then broil 2 to 3 minutes to brown the top.
  5. Remove from oven, top with reserved green onions, rest 5 minutes, and serve hot.

Notes

Assemble the casserole up to 24 hours ahead, cover, and refrigerate. If baking straight from the fridge, add 5 to 10 minutes to the bake time and skip the broil until the casserole is hot through.
