Loaded Chili Cheese Nachos Recipe

Ingredients
  

  • 1 (10 oz) bag thick tortilla chips
  • 1 (15 oz) can chili with beans
  • 1 cup shredded sharp cheddar
  • 1 cup shredded Monterey Jack
  • Pickled jalapeño slices, to taste
  • Sour cream, diced tomato, chopped cilantro, to taste

Method
 

  1. Preheat oven to 400°F (200°C). Spread chips on a rimmed baking sheet. Microwave chili 1 minute, then spoon over chips.
  2. Scatter cheddar and Monterey Jack over the chili, add jalapeños if using, then place the sheet pan in the oven.
  3. Bake for 10 to 12 minutes, until cheese is melted and chili bubbles at the edges.
  4. Remove from oven, top with sour cream, tomato, and cilantro. Serve immediately.

Notes

Nachos are best fresh from the oven. If you have leftovers, reheat them in a hot oven for a few minutes, but the chips will soften some. Leftover chili works great, just warm it before spooning.
