Ingredients

  • 1 lb ground beef (80/20)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 4 slices bacon
  • 1 tbsp olive oil (if needed)
  • 1 cup shredded iceberg lettuce
  • 1 large tomato, diced
  • ¼ cup sliced dill pickles
  • ½ cup shredded sharp cheddar
  • 1 green onion, sliced
  • ¼ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp dill pickle juice
  • 1 tsp yellow mustard
  • ¼ tsp garlic powder

Method

  1. Cook the bacon in a skillet over medium heat until crisp, about 5-7 minutes, then crumble and set aside. Leave the drippings in the pan.
  2. Mix the garlic powder, onion powder, smoked paprika, salt, and pepper. Crumble the beef into the hot skillet, season evenly, and cook over medium-high for 7-8 minutes until browned with crispy edges. Stir in half the bacon.
  3. Whisk together the mayonnaise, ketchup, pickle juice, mustard, and garlic powder to make the special sauce.
  4. Divide lettuce among four bowls, top with the hot beef, tomatoes, pickles, remaining bacon, and cheddar. Drizzle with sauce and finish with sliced green onion. Serve right away.

Notes

If you like extra sauce, double the special sauce recipe and store the rest in the fridge. The beef tastes best when it develops a deep brown sear, so don’t stir it too often during the first few minutes.
