Method
- Cook the noodles according to package directions, drain, rinse with cold water, and toss with a little oil. Set aside.
- Whisk the soy sauce, oyster sauce, hoisin, sesame oil, sugar, rice vinegar, and white pepper in a small bowl until the sugar dissolves.
- Heat 1 tbsp vegetable oil in a wok over high heat, add the chicken, and sear without moving for 2 minutes, then stir-fry 2-3 minutes until cooked through. Remove to a plate.
- Add the remaining 1 tbsp oil, then stir-fry the garlic and ginger for 30 seconds. Add cabbage and carrots and cook 3-4 minutes. Pour in the sauce and let it bubble 30 seconds.
- Add the noodles and chicken back to the wok, toss for 1-2 minutes until coated and hot. Remove from heat, add half the scallions, toss again, and serve topped with the rest of the scallions.
Notes
Rinsing the noodles stops the cooking and keeps them from sticking, so do not skip that step. If you like extra sauce, double the sauce ingredients and add a splash more at the end.
