Libby’s Pumpkin Bread Recipe

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (15 oz) Libby’s 100% Pure Pumpkin

Method
 

  1. Whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves in a medium bowl.
  2. In a large bowl, whisk granulated sugar, brown sugar, oil, eggs, and vanilla until smooth. Whisk in the pumpkin puree.
  3. Fold the dry ingredients into the wet mixture just until no flour streaks remain.
  4. Scrape batter into a lined or greased 9x5-inch loaf pan and bake at 350°F for 60 to 65 minutes, until a toothpick comes out clean.
  5. Cool in pan 10 minutes, lift out, and cool fully on a rack before slicing.

Notes

Store the loaf wrapped at room temperature up to 3 days, or refrigerate for a longer shelf life. The bread tastes even better the next day as the spices settle, so it’s a good one to make ahead.
