- Whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves in a medium bowl.
- In a large bowl, whisk granulated sugar, brown sugar, oil, eggs, and vanilla until smooth. Whisk in the pumpkin puree.
- Fold the dry ingredients into the wet mixture just until no flour streaks remain.
- Scrape batter into a lined or greased 9x5-inch loaf pan and bake at 350°F for 60 to 65 minutes, until a toothpick comes out clean.
- Cool in pan 10 minutes, lift out, and cool fully on a rack before slicing.
Notes
Store the loaf wrapped at room temperature up to 3 days, or refrigerate for a longer shelf life. The bread tastes even better the next day as the spices settle, so it’s a good one to make ahead.
