Lettuce Wrap Tacos Recipe

Ingredients
  

  • 1 lb lean ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt, plus more to taste
  • 1/4 cup water
  • 1 head butter lettuce, leaves separated and dried
  • 1 cup diced tomato
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar or Mexican blend
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Method
 

  1. Cook ground beef and onion in a skillet over medium-high heat for 5-7 minutes, breaking up meat, then add garlic and cook 30 seconds. Drain excess fat if needed.
  2. Stir in chili powder, cumin, paprika, and salt; cook 30 seconds. Add water, bring to a simmer, then cook over low heat 2-3 minutes until thickened.
  3. While beef cooks, wash and dry lettuce leaves. Dice tomato and avocado, chop cilantro. Set out sour cream and cheese.
  4. Fill lettuce cups with beef, then top with tomato, avocado, sour cream, cheese, and cilantro. Serve with lime wedges immediately.

Notes

Serve immediately for the crispest lettuce. The beef mixture can be made up to 3 days ahead and gently reheated with a splash of water.
