- Whisk the flour, baking soda, and salt together in a bowl.
- Cream the butter, sugar, and lemon zest with a mixer until light and fluffy, about 2 minutes.
- Beat in the egg, egg yolk, lemon juice, and vanilla until combined, about 30 seconds.
- Mix in the dry ingredients on low until just combined, then stir by hand a few times to catch any dry bits.
- Preheat oven to 350°F (175°C). Scoop 2 tablespoon portions, roll into balls, coat in sugar, and place on parchment-lined sheets 2 inches apart. Bake 10-12 minutes until edges are set and centers look soft.
- Cool on the sheet for 5 minutes, then move to a wire rack to cool completely.
Notes
The cookies will look slightly underdone in the center when you take them out, but they set up as they cool. For a deeper lemon taste, add an extra teaspoon of lemon zest to the dough. If your dough feels too sticky to roll, pop it in the fridge for 10 minutes first.
