Ingredients

  • 12 oz spaghetti
  • 2 (6 oz) skinless salmon fillets
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 tbsp capers, drained
  • 3 cloves garlic, thinly sliced
  • 1 lemon, zest and juice
  • 1/4 cup chopped fresh dill, plus more for serving
  • 1/4 tsp red pepper flakes
  • Kosher salt and black pepper

Method

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  2. Season salmon with salt and pepper. Sear in 2 tbsp olive oil over medium-high heat until golden, about 3 to 4 minutes per side, then set aside.
  3. Lower heat to medium. Add remaining oil and butter to the skillet, then stir in garlic, capers, red pepper flakes, and lemon zest. Cook 1 minute until fragrant.
  4. Add spaghetti, 1/2 cup pasta water, and lemon juice. Toss, flake in salmon and most of the dill, adding more pasta water until glossy. Season to taste.
  5. Divide into bowls, top with extra dill and black pepper, and serve right away.

Notes

Reserve the pasta water before draining; it’s what makes the sauce cling. If the pasta finishes before the salmon, keep it warm in a colander set over the pot with a lid.
