- Cook the raspberries, sugar, and cornstarch over medium heat, stirring often, until thick and jammy, about 4 minutes. Set aside to cool completely.
- Preheat oven to 350°F (175°C). Butter three 8-inch round pans and line with parchment. Whisk flour, baking powder, baking soda, and salt. Beat butter and sugar until fluffy, add eggs one at a time, then mix in lemon zest and vanilla. Add flour mixture alternately with buttermilk, mixing just until smooth.
- Divide batter evenly among pans. Bake 24-28 minutes until a toothpick comes out clean. Cool in pans 10 minutes, then turn out onto a rack to cool fully.
- Beat cream cheese until smooth. Whip heavy cream, powdered sugar, and lemon zest to stiff peaks, then fold into cream cheese. Chill until ready to use.
- Layer cake with raspberry filling between each layer. Apply a thin crumb coat of frosting, chill 20 minutes, then frost completely. Top with fresh raspberries and lemon slices before serving.
Notes
The filling can be made up to 3 days ahead and kept in the fridge. If the cake layers dome, level them with a serrated knife before stacking so the layers stay put.
