Ingredients
  

  • 1 (15.25 oz) box lemon cake mix, plus ingredients required on box (eggs, oil, water)
  • 1 (3 oz) package lemon gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 (10 oz) jar lemon curd
  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh lemon zest, for garnish

Method
 

  1. Preheat oven and prepare a 9x13-inch baking pan. Prepare cake batter according to package directions and bake until a toothpick comes out clean, about 25 to 30 minutes. Let cool in pan for 10 minutes.
  2. Poke holes all over the warm cake using a fork. Dissolve lemon gelatin in boiling water, stir 2 minutes, then stir in cold water. Slowly pour the gelatin mixture over the cake, letting it soak in. Refrigerate until fully set, at least 3 hours.
  3. Once chilled, spread the lemon curd evenly over the cake. Return to fridge for 15 minutes.
  4. In a bowl, whip the cream, powdered sugar, and vanilla until stiff peaks form. Spread over the curd layer, garnish with lemon zest, slice, and serve cold.

Notes

Chilling time (at least 3 hours) is not included in the prep or cook times above. For best results, make this cake the day before so the gelatin fully sets and the flavors meld.
