Method
- Preheat oven and prepare a 9x13-inch baking pan. Prepare cake batter according to package directions and bake until a toothpick comes out clean, about 25 to 30 minutes. Let cool in pan for 10 minutes.
- Poke holes all over the warm cake using a fork. Dissolve lemon gelatin in boiling water, stir 2 minutes, then stir in cold water. Slowly pour the gelatin mixture over the cake, letting it soak in. Refrigerate until fully set, at least 3 hours.
- Once chilled, spread the lemon curd evenly over the cake. Return to fridge for 15 minutes.
- In a bowl, whip the cream, powdered sugar, and vanilla until stiff peaks form. Spread over the curd layer, garnish with lemon zest, slice, and serve cold.
Notes
Chilling time (at least 3 hours) is not included in the prep or cook times above. For best results, make this cake the day before so the gelatin fully sets and the flavors meld.
