Lemon Pepper Chicken Breast Recipe

Ingredients
  

  • 2 boneless skinless chicken breasts (about 6 to 8 oz each)
  • Zest of 1 lemon
  • 1 tsp freshly cracked black pepper
  • ½ tsp kosher salt
  • ½ tsp garlic powder
  • 2 tbsp olive oil, divided
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • Torn fresh parsley, for serving (optional)

Method
 

  1. Mix lemon zest, black pepper, salt, and garlic powder in a small bowl.
  2. Pat chicken dry, coat with 1 tablespoon olive oil, and rub with the seasoning mixture.
  3. Heat remaining 1 tablespoon olive oil in a skillet over medium-high. Sear chicken 6 to 7 minutes per side until golden and 165°F internally. Transfer to a plate.
  4. Reduce heat to medium, melt butter, add garlic and lemon juice, scraping up browned bits. Simmer 1 to 2 minutes until slightly thickened.
  5. Slice chicken against the grain, spoon sauce over the top, and garnish with parsley if using. Serve immediately.

Notes

Let the chicken rest 5 minutes before slicing so the juices stay in the meat. If your chicken breasts are uneven, pound them to a consistent thickness before seasoning.
