- Mix lemon zest, black pepper, salt, and garlic powder in a small bowl.
- Pat chicken dry, coat with 1 tablespoon olive oil, and rub with the seasoning mixture.
- Heat remaining 1 tablespoon olive oil in a skillet over medium-high. Sear chicken 6 to 7 minutes per side until golden and 165°F internally. Transfer to a plate.
- Reduce heat to medium, melt butter, add garlic and lemon juice, scraping up browned bits. Simmer 1 to 2 minutes until slightly thickened.
- Slice chicken against the grain, spoon sauce over the top, and garnish with parsley if using. Serve immediately.
Notes
Let the chicken rest 5 minutes before slicing so the juices stay in the meat. If your chicken breasts are uneven, pound them to a consistent thickness before seasoning.
