- Stir together the graham cracker crumbs, 1 cup powdered sugar, and salt in a medium bowl.
- Melt the butter in a small saucepan over low heat. Stir in the lemon juice and zest and warm for 1 minute, then pour over the crumb mixture.
- Stir until no dry bits remain, then shape the dough into 12 balls and set them on a parchment-lined plate.
- Chill for 30 minutes, then roll each cookie in extra powdered sugar to coat.
Notes
The chill time of 30 minutes sets the cookies, but you can leave them in the fridge longer if you want a firmer texture. If the dough feels crumbly when you start shaping, squeeze a small amount in your palm first; the warmth of your hand usually brings it together.
