Lemon Icebox Cake Recipe

Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup heavy cream, cold
  • ¾ cup powdered sugar
  • 2 tsp vanilla extract
  • 1½ cups lemon curd
  • 1 box graham crackers (about 14 oz)

Method
 

  1. Whip the heavy cream in a large bowl until soft peaks form, about 2 to 3 minutes.
  2. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Mix in 1 cup lemon curd, then fold in the whipped cream in two additions.
  3. Spread a thin layer of the lemon cream in an 8-inch square dish. Layer graham crackers, then one-third of the cream, repeating twice more and ending with cream. Swirl the remaining ½ cup lemon curd on top. Cover and refrigerate at least 6 hours.
  4. Run a hot knife around the edges, cut into squares, and serve cold.

Notes

The cake needs at least 6 hours in the fridge to soften the crackers and set properly, so plan accordingly. If you’re in a rush, let it chill overnight and slice the next day.
