Lemon Herb Chicken Marinade Recipe

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper until the salt dissolves.
  2. Place chicken in a bag or dish, pour marinade over, and coat evenly. Refrigerate at least 30 minutes and up to 4 hours.
  3. Heat grill or grill pan to medium-high (400°F/200°C). Pat chicken dry, then grill 6 to 8 minutes per side until internal temperature reaches 165°F (74°C).
  4. Let chicken rest 5 minutes, slice against the grain, and serve with a squeeze of fresh lemon.

Notes

The hands-on time is quick, but plan for at least 30 minutes of marinating. If you want to double the marinade, scale all ingredients evenly and save half (before adding chicken) for another meal later in the week.
