- Put couscous and a pinch of salt in a heatproof bowl, pour boiling water over it, stir, cover tightly, and let sit 5 minutes.
- Pat shrimp dry, season with salt and pepper, then sear in a hot skillet with oil and 1 tbsp butter for about 2 minutes per side until pink and curled. Remove to a plate.
- Lower heat, melt remaining 2 tbsp butter, add garlic, lemon zest, ½ tsp salt, and pepper. Cook 30 seconds, then stir in half the lemon juice.
- Fluff couscous with a fork and add to the skillet, toss to coat, nestle shrimp back in, drizzle remaining lemon juice, top with parsley, and serve.
Notes
The couscous will seem dry when you first uncover it, but it fluffs up as soon as you run a fork through it. If the garlic butter seizes up or looks oily, you can add a tiny splash of warm water and stir to bring it back together.
