- Pat the salmon dry with paper towels and season both sides generously with salt and pepper.
- Heat the olive oil in a large skillet over medium‑high. Add the salmon skin‑side down, press gently, and cook 6 to 7 minutes without moving, until the skin is golden and releases easily.
- Flip the fillets, then add the butter, garlic, and lemon juice. Cook 3 to 4 minutes, spooning the butter over the fish, until just cooked through (125°F).
- Remove from the heat, spoon the pan sauce over the fillets, garnish with parsley and lemon slices, and serve hot.
Notes
If your fillets have uneven thickness, start checking the thinner pieces a minute early. A cast‑iron skillet gives the crispest skin, but any heavy nonstick pan works well.
