Lemon-Dill Baked Salmon in Foil Recipe

Ingredients
  

  • 4 (6-oz) salmon fillets
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp chopped fresh dill
  • 1 lemon, thinly sliced, plus extra for serving

Method
 

  1. Preheat oven to 400°F (200°C). Pat salmon dry, place each fillet on foil, drizzle with oil, and season with salt, pepper, and dill. Top with lemon slices.
  2. Fold foil into tight packets, leaving a little room for steam.
  3. Place packets on a baking sheet and bake 12 to 15 minutes, until salmon is opaque and flakes easily.
  4. Carefully open packets, transfer salmon to plates, spoon juices over top, and serve with extra lemon and fresh dill.

Notes

If your fillets are thicker than 1 inch, add a couple of minutes to the bake time. You can prep the packets up to 4 hours ahead and keep them in the fridge, then bake just before dinner.
