Lemon Cod Piccata Recipe

Ingredients
  

  • 4 cod fillets, about 6 oz each
  • 1/4 cup all-purpose flour
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 1/4 cup dry white wine
  • 2 tbsp fresh lemon juice
  • 2 tbsp capers, drained
  • 1 lemon, thinly sliced
  • 2 tbsp chopped fresh parsley

Method
 

  1. Pat cod dry, season with salt and pepper, then dredge in flour and shake off excess.
  2. Heat oil and 1 tbsp butter in a skillet over medium-high. Sear cod 3 to 4 minutes per side until golden. Transfer to a plate.
  3. Sauté garlic 30 seconds. Add wine and lemon juice, scrape up browned bits, and simmer until reduced by half, 2 to 3 minutes. Stir in capers. Remove from heat and swirl in remaining 2 tbsp cold butter until sauce is glossy.
  4. Return cod to skillet, add lemon slices, spoon sauce over, and warm through 1 minute. Serve with parsley.

Notes

Use a thin fish spatula for flipping, cod is delicate. If you want to make this with chicken, pound breasts to an even thickness and cook until they reach 165°F (74°C) in the thickest part.
