Method
- Heat oil in a large pot over medium-high heat. Season chicken with salt and pepper, then cook until golden on the outside, about 4 minutes. Remove to a plate.
- Reduce heat to medium. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Stir in garlic and cook 30 seconds.
- Pour in chicken broth and bring to a boil. Add orzo and the browned chicken, then reduce heat and simmer until orzo is tender and chicken is cooked through, 8 to 10 minutes.
- Remove from heat. Stir in lemon juice, lemon zest, and dill. Taste and adjust salt and lemon.
- Ladle into bowls and top with extra dill. Serve hot.
Notes
The orzo will drink up broth as the soup sits, so leftovers may need a splash of chicken broth when reheating. If you plan to make it ahead and want to keep the orzo firm, cook and store it separately, then combine in each bowl.
