Ingredients
  

  • 4 tbsp unsalted butter
  • 1 garlic clove, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp capers, drained
  • Pinch of salt and black pepper
  • Fresh parsley, chopped (optional)

Method
 

  1. Melt the butter in a small skillet over medium heat and cook the garlic for 30 seconds until fragrant.
  2. Add the lemon juice and capers, then simmer for 1 minute until glossy.
  3. Remove from heat, season with salt and pepper, and spoon over your dish right away. Top with parsley if you like.

Notes

This sauce holds its heat for only a minute or two, so have your fish or chicken ready to plate before you start. If you want the garlic a little more pronounced, let it cook for a full minute before adding the lemon, but keep the heat low so it softens without browning.
